Improving the Oxidative Stability of Pomegranate Seed Oil Using Steam Deodorization and Comparing Its Effects on Oils Extracted by Cold Pressing and Hexane

Introduction: Pomegranate seed oil is rich in bioactive compounds but its unpleasant odor and oxidative instability limit its application. This study examines the effect of steam deodorization on oil quality from two extraction methods and compares it with antioxidant addition. [1]. Materials and Methods: The deodorization of pomegranate seed oil was carried out using steam distillation to remove undesirable volatile compounds. In this method, 150 g of oil was subjected to a steam stream with 700 ml of distilled water for 100 minutes. After the volatile compounds were separated, the oil was completely dried using a decanter, centrifuge, and dehydrating salt. The oxidative stability of the samples was evaluated using the Rancimat test. Four samples, including raw cold-pressed oil, deodorized cold-pressed oil, cold-pressed oil containing 500 ppm natural tocopherol, and hexane-extracted oil, were examined. For each test, 2.5 g of sample was tested at 110°C with an air flow of 20 liters/hour in an 892 Professional Rancimat, and the induction time was measured. Results and Discussion: The cold-pressed oil had lower oxidative stability than the hexane-extracted sample [2]. The addition of vitamin E did not significantly increase the induction time. In contrast, steam deodorization led to a significant increase in stability in both samples, indicating the key role of removing oxidation-initiating compounds. The hexane-extracted sample after deodorization showed the highest stability, likely due to reduced initial contact of the oil with oxygen during extraction. Conclusion: Steam deodorization is a more effective and practical method than antioxidants for improving pomegranate seed oil stability, and the extraction method plays a key role in determining oil quality.
