| Abstract The extraction of various compounds from coffee powder for use in the food, pharmaceutical, and cosmetic industries is important in industrial processes, and the quality of the extract plays a significant role in its chemical properties and bioactive compounds [1,2]. The use of optimized operational parameters can enhance the quality and quantity of the extract [3]. To investigate the physicochemical properties of coffee powder extract, a solid-liquid extraction method using a Soxhlet apparatus was employed, utilizing a mixture of water, ethanol, and acetone at equal volume ratios (33% v/v). The parameters studied include the density of the extraction solution, the refractive index, and the pH of the extract. For this research, four experiments were conducted at different temperatures and extraction times, and the effects of the studied parameters on the properties of the extracts were examined. The results of the conducted experiments are presented in Fig. 1. Figure (1): The effect of temperature and extraction time on the refractive index, density, and pH of the extract obtained from coffee powder using a Soxhlet extractor. As observed from the results presented in Fig. (1), changes in temperature and extraction time result in only slight variations in the density and refractive index of the extracts. This observation can be justified by the large amounts of solvent used compared to the extract. The changes in the pH of the extracts indicate that, firstly, all samples have a pH of less than 7, which signifies the extraction of acidic compounds. Secondly, with an increase in extraction temperature, the pH of the extracts has increased on average, indicating a reduction in the concentration of acidic substances in these materials. |
